Waking up to the flavourful aroma of brewed coffee with cinnamon is such bliss! I am blessed have been given the opportunity to be a stay-at-home Mom with a husband that knows how to cook when you’re too lazy on Sundays. So I am confident that if I woke up late, my children will not go hungry at all.
Today is usually a slow day for us so he usually takes over my kitchen on days like this. Coffee was already waiting just as I smelled it on my way to the kitchen and he already whipped us up a great Sunday breakfast!
Sharing to you his delicious breakfast recipe for Baked Potatoes with bacon and eggs.

Ingredients
- 3 large potatoes
- 6 eggs
- 4 slices of bacon
- 4 finely chopped scallions
- 1/2 cup grated cheddar cheese
- 1/4 cup milk
- 1/4 tsp salt
- 1/4 tsp pepper
- Olive oil, salt and pepper for seasoning
Instructions
- Preheat the oven to 400 degrees.
- Wash the potatoes and season them with salt, pepper and olive oil
- Wrap the potatoes in foil and bake for 45 minutes to an hour until soft.
- While the potatoes are cooking, place bacon into a large pan and cook until crisp. Reserve 2 tsp of the bacon fat before discarding. Let it cool and chop into small pieces.
- Cut the potatoes lengthwise in half.
- Scoop out most of the potato, leaving a half-inch border around the edges and place in a large bowl.
- Season the potato skins with salt and pepper & mash.
- Add the reserved bacon fat, milk, cheese, scallions, chopped bacon and the 1/4 tsp each of salt and pepper.
- Mix well to combine, and then divide the filling evenly into the 6 potato halves.
- Make a hole in the center of the filling with the back of a spoon, large enough to hold an egg.
- Crack one egg into each and place it in the oven to bake for 20-25 minutes at 375 until the white of the egg is white and opaque.
